Tandoor
The tandoor is used for cooking certain types of south Asian foods such as tandoori chicken, chicken tikka and bread varieties like tandoori roti and naan. The oldest examples of a tandoor were found in the settlements of the ancient Indus Valley Civilization.The heat for a tandoor is traditionally generated by a charcoal or wood fire, burning within the tandoor itself, thus exposing the food to live-fire, radiant heat cooking, and hot-air, convection cooking, and smoking by the fat and food juices that drip on to the charcoal.
Tawa
A tava(h) or tawa(h) is a large, flat or convex disc-shaped griddle made from metal, usually sheet iron, cast iron, sheet steel or aluminium. A tava is used to cook a variety of leavened and unleavened flatbreads and crepes across the broad region: bread, roti, chapati, paratha, pao bhaaji, chaat, and dosa. In south Asia, tavas are also used to fry foods called tava fry, taka tak bhaji, tawa bhaji, tawa masala, etc..
